This chocolate bar is made quite literally from scratch. I start with 100% raw ground cacao and then sweeten the chocolate with 4 special sweeteners: Monk Fruit, Stevia, Erythritol and Allulose. These are not sugar alcohols and they all have zero or near zero glycemic index and are therefore suitable for diabetics and keto diets.
It has taken 3 years for me to formulate the sweetening such that it is balanced allowing the chocolate flavor to come through and without an aftertaste.
