This chocolate comes primarily from the Ivory Coast with additional beans blended from Ghana and Ecuador. I've always liked this chocolate for its deep, pronounced cocoa taste. It is in no way bitter and I wouldn't say it's overly acidic either. Chefs like this chocolate for the deep cocoa flavor and I've always liked nibbling on it at the shop. So I finally just decided to make it into a bar!
