This the filling of the famous "Dubai" bar, the pistachio kataifi crunch but taken to the next level. It is made from raw pistachios that are ground to a fine paste using a melanger for many hours. It also has toasted sesame seeds that are ground as well, effectively making a tahini from scratch. The crunch comes from the kataifi dough which is toasted with clarified butter (ghee).
But then there's more. I added hand chopped and full pistachios for extra delicate crunch along with additional whole toasted sesame seeds. The result is a smooth paste that is perfect as a dessert topping, dipped in chocolate (of course), or simply eaten from a spoon. It's rich, aromatic and incredibly flavorful. Just one spoonful is an amazing snack.
