Salted Caramel Bar

This bar is very very different.  It isn't white chocolate mixed with caramel pieces.  It isn't chocolate that's been flavored to taste like caramel.  It isn't artificially colored to look like caramel swirl...  So what is it??

I start with 100% real white chocolate made with cocoa butter, sugar, milk and vanilla.  I then heat it and stir it repeatedly to quite literally caramelize the sugar and milk proteins, converting the chocolate to a whole new thing -- caramel chocolate.   Not chocolate with caramel -- caramel chocolate!

When you heat chocolate like this it creates small grains of caramelized sugar.  To make those silky smooth, the chocolate is refined for hours in a stone wheel melanger, along with a dash of sea salt.  That's the secret to fully incorporating the caramel taste and making it smooth.

Then, when it's time to cast the chocolate into a bar, the caramel chocolate is mixed with white chocolate to create those dazzling striations of color.  Each bar is meticulously crafted in this way & no two are alike.
